Coffee 101: 


The first coffeehouse in America was opened in Boston, MA in October of 1676 by a man named John Sparry.
This according to author, Jim Vrabel in his book titled, "When in Boston".

Growing national franchise, Dunkin Donuts opened in Quincy, MA in 1950. Over 3 million customers a day are served.

Coffee as a commodity is second only to oil in active trading. More than 60 varieties of coffee exist.
Approximately 70 countries are now involved in coffee production worldwide.

Coffee does not grow as a brown bean, but rather as a red berry.
During the roasting process, the natural sugars are carmelized which produces the brown bean.

The Legend of Kaldi

Story has it that around 300AD, Kaldi an ethiopian goatherd noticed his goats eating red berries from a nearby tree.
The goats quickly became more lively and energetic. After trying the berries himself, it is believed that Kaldi shared
his find with monks at a local monastery.
The monks enthusiastically welcomed the natural stimulant as a means to stay awake during nightly prayer sessions.
They soon discovered that even older dried out berries produced the same luxurious effect. While deliberately roasting
the berries with the intent to store, the monks found that the taste and pleasing aroma were wonderfully enhanced.
They very quickly went about the business of sharing Kaldi's find with the rest of the world.

The Rest of the Story

It is said that Kaldi's goats soon became over-populated, driving his expenses up and his prices down.
His land became void of trees and his market share plummeted. His wife and kids left him.
The good news? Although Kaldi had trouble sleeping at times, he was able to lose some weight.
